The Mother Bird

Since moving to Washington, we’ve had a little family of Hummingbirds flock to our front porch. Every morning, I am greeted by this sweet little song bird… Hummed by what my kids call, “GreenBack”, and although there is nothing romantic about her name, Greenback has become our friend. She’s so tiny and swarms with her little friends in our Crab Apple tree out front. And as they begin to chase each other through the trees and above our house, they never forget to take a little trip for a tasty treat in my feeder. The hummingbirds in Washington are distinctly different from the ones in Texas. These little babies up here are so small and so quiet. In Texas they are so much bigger and their hums are much louder. They also survive up here in the winter. I know this because its winter, and although the nights get cold, they are still thriving and make visits every morning. It’s the most remarkable thing.

 

I looked up the meaning or (symbol) of a Hummingbird. Because I’m all about signs and omens and all the things. And WOW!!! Hummingbirds bring so much life and light in our lives. They are a sign of happiness, healing and good fortune. They are also known to be messengers to the living from the dead. These tiny pieces of life have the capabilities of loving us through their fast wings and breathtaking hums. So with that, I want to give you a little bit of my love… maybe not through my wings or my hums, but with a few things that I know best through cooking and music.

 

At least once a week we serve breakfast for dinner. It’s a thing I started to do when the kids got busy and I didn’t want to cook or think about what I was going to cook. I serve everything from omelets, pancakes, fried eggs and fruit. Bacon is sometimes thrown in there when there’s time… Its actually turned into my absolute favorite dinner. HA! I could eat an omelet every day!! Our neighbors have chickens and they continue to bless us with the large amount of eggs they have. What a beautiful gift to never run out of. So in honor of my beautiful Hummingbirds and my incredible neighbors and their chickens, I am tearing up my omelet recipe for you. And it is going to be A-MAZING. You’re welcome.

 

 

OMELETE

 

Grab all the veggies and/or protein in your fridge that would make an excellent dinner omelete… Left over Chicken, Green Peppers, Mushrooms, Spinach, Cheese (I love Feta in mine!) Pepperoni, Bacon, or Asparagus and let’s get started!

 

I’m going to defer to one of my favorite food bloggers, Love and Lemon, to get us started on making of this bad boy. You can also click on their link and it will give you some really great veggie pairings in your omelet!  

 

 OMELETTE

 

large eggs

Sea salt and freshly ground black pepper

Butter or extra-virgin olive oil, for the pan

 

Instructions

1.    Crack the eggs into a medium bowl and whisk until the egg whites and yolks are well combined. Season with salt.

2.     Heat an 8-inch nonstick skillet over medium heat. Add a small pat of butter or a drizzle of olive oil to the pan and swirl to coat the bottom. Pour the eggs into the pan and reduce the heat to medium-low. Cook without stirring until the edges just begin to set, about 10 seconds. Working around the edges of the omelette, use a spatula to quickly push the cooked egg toward the center of the pan. Let the uncooked egg run to the outside of the pan, tilting the pan as necessary. Continue until the uncooked egg thickens and fills in the edges of the omelette slowly, then use the spatula to gently smooth the raw egg into an even layer.

3.     Cook without stirring until the omelette is mostly set, then add your desired filling on one side and fold the other side over it. Cook until the eggs are just set. Remove from the heat, season to taste with salt and pepper, and serve.

 

 I could have literally paired MANY songs with this simple, yet delicious midweek breakfast meal… but I chose one that fits the Hums, the Eggs, The Mothers, and the all the things that make us feel hopeful and happy. Along with my sweet little green Hummingbird, Brandi Carlile’s song, The Mother, was the one I felt most connected to. I’ve been searching for the perfect pairing for Brandi… she’s one of my favorites in so many ways. Her voice is magic… and this song, oh my goodness this song!! It’s as if my mother comes to visit me in the form of the Hummingbird every morning. And that fills me so deeply in so many ways. I hope you enjoy this song as much as I do. I’ve had a lot of time to reflect up here in Washington. The adventure my family has been on is unexplainable… however, my little Greenback is a sign of not just the healing we needed during this time, but the happiness that we continue to be empowered by. Whether it’s healing, happiness, good fortune, or just my mom or grandmother coming to say hello while I drink my morning coffee (or make my delicious omelet) …. Gives me absolute pure joy.
